Cut 2 carrots, 2 celery stalks, and 1 large onion into large chunks. Toss together with 5 whole cloves of garlic, 1 package of Eat Smart Butternut Squash and 2 tbsps. olive oil. Sprinkle with salt and pepper and roast at 350° F for one hour. Puree in a food processor with 1 cup of vegetable stock, then simmer in a saucepan for 10 minutes, stirring in 1 more cup of vegetable stock. Serve warm.

#EatSmartTip: Impress guests by using squeezable sour cream or chili flakes to make a pumpkin face in each bowl of soup.

Mason Jar Mummies

Wrap a mason jar in 1″ white gauze tape. The messier-looking this is, the better it’ll look! Hot glue on some googly eyes to complete the look. These Mason Jar Mummies look great as candle holders, or you can make the perfect gift by filling them with candy and putting the lids on.

Arrange prepared veggies on a wooden cutting board or a serving platter in the shape of a skeleton. Save time shopping and prepping by using an Eat Smart Vegetable Tray instead of buying most of these individual ingredients.

#EatSmartTip: Mix red food coloring into the ranch dip for a ghouly finishing touch!

Pumpkin Preserving Tip

Soak your freshly carved pumpkin in a bleach solution (1 tsp. bleach per gallon of water) for 8 hours, then spray daily with the same solution to keep the pumpkin from rotting or looking wrinkly.
